Kristina Marinkovich, author of the cookbook “H.E.A.L.T.H.Y. Eats”, shares a recipe for Chicken Dip and S’mores Bites.
Clean Buffalo Chicken Dip
Submitted by: The Kitchen of Amanda Bee
1-pound boneless, skinless chicken breast
3/4 cup Greek yogurt
1/4 cup Franks Red Hot
Garlic Powder
Diced garlic
Diced onion
Add all ingredients into a crock-pot. Cook on low for 3 hours. Stir to ensure that all of the chicken is washed with the seasonings, yogurt, and hot sauce. Once cooked thoroughly, you will be able to pull the chicken apart into shredded pieces and enjoy!
Ideas for serving:
Top with blue cheese and enjoy with carrots and celery
Add to the top of a salad
Put on lettuce wraps for a “taco”
S’more Bites
1 bag regular sized marshmallows
½ c dark chocolate morsels
¼ c graham cracker crumbs
Melt chocolate for 30 seconds at a time in microwave until smooth. Line baking sheet with waxed paper. Dip marshmallow halfway in chocolate and shake off excess. Dip chocolate covered marshmallow in graham cracker crumbs to just cover the top. Place marshmallow un-chocolate side down on waxed paper. Do this for each marshmallow or for as many as desired.
*I was asked, “How is this healthy?” You are only eating one marshmallow, a little bit of chocolate and a not even an entire graham cracker instead of 2 graham crackers, one marshmallow, and 6 pieces of chocolate. This is a significant decrease in the number of calories you could consume with a regular s’more.
