In the Kitchen Special: Oatmeal Cookies

Plant-Based Chef Char Nolan shares an idea for a quick grab-and-go breakfast cookie!

Oatmeal Cookies

2 ripe, mashed bananas

½ cup of unsweetened applesauce

2 T flax meal

1 t of cinnamon (or ground ginger)

1 t pure vanilla extract

2-3 cups of uncooked oats

½ cup raisins, vegan chips, etc.

Mash bananas, add applesauce, mix well. Add flax meal, spices, and stir well. Gradually add oats. Texture should be like biscuit dough. Let proof for 10 minutes. Scoop into tablespoon sized balls, place on Silpat and bake in a 400-degree oven for 15-18 minutes. Let cool and store anywhere, if you have any left.
