It’s time for another installment of Retro Recipes where KC and her niece Mallory try out a recipe from a bygone era. This month, they’re taking us back to the 1700s to make Salsify Stew.
SALSIFY STEW
1 can of salsify, or fresh if you can find it! If fresh, it should be peeled and chopped.
2 Tablespoons Butter
1 cup half and half
Boil the salsify in one cup of water for about 15 minutes. Drain half of the water.
Add the half and half, butter, and a little salt and pepper.
Simmer for another ten minutes, letting it thicken a bit.
Note from KC and Mallory: We decided it’s not bad, but needs a little onion, carrot, and maybe mash some of the salsify into the stew. Maybe add a potato too!
