It’s time for another installment of Retro Recipes where KC and her niece Mallory try out a recipe from a bygone era. This month, they’re making Chocolate Soufflé.

Chocolate Soufflé

From The New American Cook Book, 1941

2 Tablespoons fat (butter)

3 Tablespoons flour

1 cup milk

½ cup sugar

½ teaspoon salt

3 squares melted unsweetened dark chocolate

3 egg yolks

1 teaspoon vanilla

3 stiffly beaten egg whites

 

Melt fat and blend in flour.

Add milk slowly and bring to a boil, stirring constantly.

Add sugar and salt.

Mix chocolate with 3 tablespoons hot water, and add to mixture.

Cool.

Add egg yolks and beat until light.

Add Vanilla.

Fold in egg whites.

Turn into greased baking dish. Set in pan of hot water.

Bake at 350 for 40 to 45 minutes. Serve hot with whipped cream
